HOLNE CHASE RESTAURANT

Earlier this Winter we were delighted to welcome back to our “fold”; Ross Duncan as Head Chef at Holne Chase. Ross first joined our brigade as a Commis Chef back in 1995. Just three years later he had worked his way up to Head Chef and later left to return to his homeland in the highlands of Scotland. A further spell over the Pond in Richmond, Virginia and then for a leading UK Brasserie chain finally led Ross back to Dartmoor where he brings a wider experience and culinary imagination to our restaurant. At Holne Chase we have always championed local, seasonal food and now we are able to boast a menu that arguably has lower food miles than any other in the region. |

All our red meat has been bred and fed on Dartmoor and comes from native breeds that demonstrate a greater depth of flavour because of their “slower” rearing process. Holne Chase's sister farm at nearby Holwell, Widecombe also has it’s own butchery and cooperative meat business that takes meat direct from moorland farms and ensures it is hung for maximum flavour. Beef is from the Widecombe Valley and predominantly Galloway crossed with South Devon, Scotch Blackface lamb from Holne and pork is “home-reared” from Saddlebacks. |
A Holne Chase breakfast will only have travelled 3 miles from Holwell Farm where the Sausages are all handmade in natural skins, the bacon home cured the traditional way and the eggs freshly laid for that wonderful deep yellow yolk!
Game always features highly in season such as Venison, Pheasant and Partridge and will have come from local estates. Poultry is all free range from Devon farms.
Menus at Holne Chase are changed daily to allow for a good choice of the freshest produce during your stay/dining experience with us.
They are also changed each season to ensure that the produce used is being prepared for you at it’s seasonal best.
There is little room for pretension with Holne Chase fare and we always encourage a flexible approach from our kitchen so you can enjoy the food you desire.
If you want to take a “Taste of Dartmoor” home with you we can even deliver an order from the farm for you to the hotel. To find out more, please go to our Meat website; www.tortotor.co.uk
Here you will also find an “order on line” facility.
We had lunch today at the hotel and want to let you know that we thoroughly enjoyed the whole experience. Thank you to the manager and the waitress who were quietly attentive and helpful .It was so nice to eat in such pleasant, well kept suroundings.Last but not least, many congratulations to the chef ! The food was SUPERB.The presentation was excellent and the meal very well balanced. It thoroughly cheered up a dull. cold Thursday ! We will be back ( and tell our friends !) Mrs S Owen, Feb 08
